I love a good soup!
It seems like Fall came overnight here. Nothing better than a cool sunny afternoon watching football and a pot of soup on the stove.
This is a simple recipe that can be edited as you wish.
Nearly every soup I make starts with onions and garlic! They are my go-to ingredients.
Here’s what to do!
Half a sweet onion chopped.
A couple cloves of garlic.
A good bit of ancho chile powder (use whatever you have on hand).
Cook until soft. Add a carton of chicken stock.
Bring to a simmer and add chicken breast, I used 3.
Cook 20 minutes, remove and shred when cooled.
I added fresh corn. I cut it off three ears.
Add a can of cannellini beans with the liquid to help thicken the soup.
Add the shredded chicken back to the soup.
Serve with chips, avocado, sour cream and cheese!
