So every now and then. I just don’t feel like cooking and have no idea what to make! This is when I make my go-to breakfast for dinner! I have two favorite things to make for these occasions. One is a frittata and the other is Grandma’s pancakes. A few nights ago I looked in the fridge and thought I’d whip up a bacon and cheese frittata. My family loves bacon so this makes life easy because everyone will eat it! I serve toast and fruit on the side.
I use a large non-stick 12″ frying pan (needs to be oven safe), six eggs, 1/2 of skim milk and salt and pepper. Whisk those ingredients together. I think the trick to getting the frittata to slide right out of the pan is to use enough oil to nicely coat the pan. Chop your cooked bacon into bite-size pieces. Add the egg mixture to the pan. Using a spatula go around the edges as the eggs cook and are semi-set. Sprinkle with bacon and cheese and put under broiler to finish cooking.
Once you have the technique down you’re set! Try, tomatoes & feta, zucchini & onions, ham & swiss or whatever you have in the fridge. Limitless possibilities!
