Did you grow up eating Sloppy Joe’s? We had them when we were kids. It wasn’t until pretty recently that I made them for our kiddos. They were a hit. Of course, I had to update them just a bit! This is another great dinner during the holidays. It’s easy to put together and quick. A side of fries and a vegetable and you’re set! Adding the cheese, corn chips and jalapenos adds the crunch and spice we love! The great this about this dinner is that it’s perfect for the busy weeknights. I can get dinner on the table in no time, it’s easy and delicious. We can share a meal and still get the kids off to their activities. I love sitting down with the kids and hearing about their day at school, it’s one of my favorites parts of the day!
- 1 lb. ground turkey or beef
- One can of Manwich
- One can of Ro*tel tomatoes
- Corn chips
- Jarred jalapenos
- Shredded cheese
- Spray your pan with Pam cooking spray.
- Cook meat until no longer pink, breaking up as you go.
- Add Manwich and Ro*tel tomatoes and cook for a few minutes.
- Add the mixture to a roll and top with corn chips, cheese and peppers!
- *The Ro*tel add a nice spice, add to taste.
I picked up what I needed while shopping at Walmart recently. I keep the Ro*tel in my pantry all the time. It’s great to use in chili and soups, it adds that nice little kick that we like! Manwich is another must have. for the pantry. You can use Manwich in chili too, it’s not just for sandwiches.
