You might be wondering, what the heck is a galette? Or maybe you’re a foodie and you know!
A galette is a flat round cake of pastry often topped with fruit. It’s pronounced ga-let.
I love the simplicity of these, how they let the ingredients shine. I love that they are rustic and have that homemade feel.
I couldn’t let all the beautiful summer tomatoes go without making one of these.
This is a wonderful lite dinner or lunch item.
One sweet onion -sliced
3-4 Tomatoes -sliced
Salt & Pepper
Saute onoins in olive oil until carmelized.
Roll out pie crust onto a cookie sheet and add onions leaving a 1″ edge all around.
Add sliced tomatoes.
Drizzle with honey and sprinkle with salt & pepper.
Fold over the edge all the way around.
Bake at 425 degrees for about 20-25 minutes. I brushed the crust with some melted butter about 5 minutes before it was done baking.
Serve warm or at room temp.
AND since it’s Fall I got some lovely apples from the farm stand around the corner.
I made an Apple & Raspberry version.
Sliced apples coated in a bit of cinnamon sugar, a couple drops of lemon essential oil and topped with raspberries.

I love making these because you can literally use the same idea for so many ingredients.
