I did a stuffed pepper recipe awhile back and thought I’d give another one a try my stuffed red peppers. To see my other version check it out here.
This time I used red peppers and a ground turkey filling.
I used a pound of ground turkey
One can of tomatoes with green chiles, they have a nice heat to them.
Lots of chili powder, a bit of cumin and a good amount of garlic powder.
Half a can of drained and rinsed black beans.
Lots of shredded cheddar for the topping.
Fill peppers and top with lots of cheese! I added jarred jalapenos to a couple!
Bake at 350 for about 20-30 minutes covered and then another 5-15 uncovered until the peppers are tender or to your liking!
These were delicious and there were no leftovers!
