I love using my cast iron skillet. There’s something kind of old fashioned about it but I love it!
This cake was super easy to put together. It’s from Trisha Yearwood’s Food Network show. You can find the full recipe here. I skipped the whipped cream and pecans.
5 tablespoons salted butter, at room temperature
1 1/4 cups all-purpose flour
3/4 cup
1 1/2 teaspoons vanilla extract
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk ** I didn’t have buttermilk so I made my own with half n half and the juice of half a lemon!)**
About six large strawberries cut up.
Beat the butter and sugar, add egg and vanilla. Add the dry and wet ingredients alternating.
Pour and spread into your skillet!
Bake at 375 for about 30-35 minutes.
I used a spray that has both butter and flour (from Willaims Sonoma) but if you don’t have something like this butter and flour the cast iron pan.
