We have a little get together to go to and I wanted to try these strawberry cupcakes I found on Pinterest, You can find the original recipe here at my Baking Addiction. I made a few modifications. Also, next time I would make half the frosting (I had at least half leftover). I’ll use that on a cake later in the week for our company. These are really moist and delicious, the strawberry bits are a lovely surprise and the pale pink frosting is so pretty.
Adapted from My Baking Addiction
yellow cake mix
1/2 packet french vanilla instant pudding
1- 8 oz strawberry Greek yogurt
3/4 cup canola oil
1/2 cup water
2 tsp vanilla
10 diced strawberries
Put all ingredients in stand mixer and mixed until incorporated well. Fold in diced strawberries.
I used a 1/2 cup measuring cup to fill the cupcake liners. Makes 24 cupcakes. Bake at 350, mine took 20 minutes, bake until the top springs back. The center will indent when cooling.
strawberry puree, 6-8 strawberries
confectionary sugar, not quite a 2 lb bag
four sticks butter (I had at least half leftover so it depends on how much frosting you want on them)
Mix butter for about 5 minutes and gradually add the confectionary sugar, mix well. Add 2 tsp of vanilla and 2-3 tbsp of the puree to desired consistency. Add more if necessary up to 5 tbsp. I used 3 total.
