It is FREEZING here so there is nothing like a hot bowl of soup.
I made this quick chicken noodle soup before we had to run out for a basketball game. This is perfect for any busy weeknight!
The rotisserie chicken is your best friend here.
I sauteed one diced onion, about 1 cup of chopped carrots in olive oil. Salt and pepper. Add one clove of garlic chopped and saute until fragrant.
Add a 48 oz box of chicken broth or stock, I had broth.
Add about one cup of egg noodles once boiling. When noodles are almost done add shredded chicken and one cup of frozen peas.
Heat until peas and chicken are heated through. About five minutes.
Service piping hot with crackers, rolls, or bread if you want :)
This was stove to table in about 30 minutes.

I’m enjoying advent and preparing for the coming of Jesus. We are doing pretty good on our advent wreath although we haven’t all been together every evening. I kept the decorations very simple this year. Our tree is up and there is snow on the ground. All in all I think we are in pretty good shape.
