On a recent visit to Williams Sonoma I had a Pumpkin butter panini and it was really good, kind of like a little dessert. I found a recipe for a homemade pumpkin butter since the tiny jar there was about $12, I think.
one can pumpkin 150z
1/4 cup brown sugar
1 1/2tsp pumpkin spice
1/4 tsp salt
juice and zest of 1/2 lemon
3 tbsp of OJ
1/2 cup pecans toasted and ground in a food processor
2 tsp sugar
Combine all ingredients in a saucepan and cook for about 15 minutes, you can adjust spice and sweetness to your liking.

I put mine in little jars, let cool & refrigerate. Will keep about 2 weeks.
Back to my WS trip. They were making a panini with the pumpkin butter and cream cheese.
Spread each on one side of the bread and brush both sides with olive oil. I served mine with apple cider.
