I made Polenta with Bolognese sauce for the first time last night and it was delicious! I love all things food (you could tell by my package from Amazon today), if I could make a living cooking, writing about cooking or entertaining I would have the perfect job!
I was watching Food Network over the weekend, the show, The Best Thing I Ever Made. Chef Michael Chiarello made a polenta and bolognese sauce (a quick version). I used that as my jumping off point and went from there.
I used one cup of polenta into 4 1/2 cups of water. Cook according to package. I added a splash of heavy cream, fontina, pecorino romano, tablespoon of butter and freshly grated nutmeg (next time I’ll add a bit more). It was creamy and a lovely pale yellow!

For the bolognese sauce I started with cubed pancetta (already purchased like that I think a 4 oz package) and got that nice and crispy, add 1/2 an onion until they are soft, two cloves of chopped garlic, a small packaged of porcini mushrooms that I reconstituted and chopped, cook that for a couple minutes. I added about 1/2 cup of white wine to deglaze the pot. When that cooks down I added one 28 oz can of tomato puree. Then some chicken base, pepper, and few red pepper flakes. I cooked for about an hour and then added pecorino romano at the end.
Spoon the bolognese over the polenta and enjoy! This sauce would be wonderful over fresh pasta too!
