This is by far my favorite salad. The flavors combine beautifully. I use spring mix, or a blend of spinach, arugula and radicchio, it just depends on what looks good when I’m shopping. I toast some whole walnuts and give them a rough chop. They provide a nice richness. I add dried cranberries for a sweet component and either blue cheese or gorgonzola which has a great sharp bite. Sometimes I buy a raspberry vinaigrette and sometimes I make it. Today I made my own. I use a handful of fresh berries, salt, pepper, white balsamic vinegar and olive oil. I combine everything in the blender except the olive oil then I drizzle that in through the top while the blender is one until I like the consistency.
I always toast nuts when I’m using them raw. It really brings out a wonderful flavor. You can do this by putting them in a dry pan over medium heat until you smell them and then turn off and allow to cool.
