I love these mini scones, they are the perfect bite. The original recipe came from here. I changed a few things based on what I had on hand. Here is my revised recipe.
Scones
2 cups flour
1/2 cup sugar
1 TBSP baking powder
1/4 TSP salt
1/2 stick of cold butter, cubed
1/2 whole milk
1 TSP vanilla bean paste.
Glaze
3 cups powdered sugar
whole milk start with 5 TBSP add more if necessary
1 TSP vanilla bean paste
1 TBSP melted butter
Preheat oven to 425 degrees. Use parchment or Silpat. In a bowl add flour, sugar, baking powder, and salt, pulse in a food processor or whisk to combine. Add cold butter and pulse until well mixed or use a pastry cutter. In a separate bowl, whisk together milk, egg, and vanilla bean paste. Add to flour mixture until just mixed. Turn the dough out onto a floured surface then knead to just bring the dough together. Roll dough into a rectangle about 1/2″ thick. Cut the dough into triangles based on how big you’d like to make them. Let cool. Dip each into glaze and allow to set before packaging.
