Growing up my grandmother made these for us every time we slept at my grandparent’s house. Now I make them for my children. It’s my go-to recipe for pancakes. I’ve added one thing to her original recipe. They are more like a crepe than a fluffy pancake so don’t be alarmed that the batter is thin.
Pancake Recipe, Makes about 12 pancake. Double for a large crowd or hungry kids!
1 1/2 cups all-purpose flour
1 1/4 cups milk, I use skim
dash of salt
1 tsp. vanilla extract or paste
She added a couple teaspoons of sugar but I find with the syrup you don’t really need it so I leave it out.
You can use Pam spray but she always used oil. It gives you those nice crunchy edges. The key is to wait until the oil is hot to add the batter. Cook over medium heat. You can tell when it’s set and then give it a flip. I love to get a little color on them. Serve with butter, fruit, powdered sugar, syrup or all of the above!
