Fettuccine Alfredo – Easy Weeknight Dinner

Who doesn’t love a simple recipe that is quick to pull together and delicious?

This is a family favorite! Fettuccine Alfredo – Easy Weeknight Dinner.

I did an organic version this weekend and it was super.

One lb box fettuccine pasta from Whole Foods (love that place!). It may have replaced Trader Joe’s for me! Cook as directed on box.

Half stick butter

Pint-size carton half & half

Salt and pepper

3 -4 cloves of garlic chopped

Grated parmesan or romano cheese

Melt butter and add chopped garlic. Saute for about two minutes on low heat. If you burn garlic toss it out and start over. Burnt garlic tastes gross!

Add the entire pint carton of half & half and warm on low heat.

Add a good handful of grated romano or parmesan cheese. I use a blend of both. I sprinkle some on top at the end as well. I like cheese.

Whisk to incorporate. Raise heat a bit until it bubbles to thicken slightly. Turn down and add nearly cooked pasta. Add to sauce and cook for about a minute to combine.

Serve hot.

You can dress it up with veggies or chicken and serve with a green salad to lighten it up! This week I had broccoli in the refrigerator. I roasted in the oven for about 30 minutes at 350. I drizzle with olive oil and a sprinkle of kosher salt.

The kids usually eat theirs separate but I put mine right on top.

    This is one of my favorite things to make but I believe yours is more low cal than mine. We use real heavy cream. So glad you shared this!! :)
