I love this easy strawberry freezer jam! I usually make two batches which will give you 10- 8oz jars. Plenty to keep and share. This will keep in the freezer for up to one year. You can thaw in the refrigerator, it will keep in the fridge for 3 weeks.
Strawberry Freezer Jam
one quart of fresh strawberries
one box of Sure Gel
4 cups of sugar
Wash containers with tight fitting lids. (I run mine through the dishwasher). Clean and cut the strawberries. Mash the strawberries, you need two cups crushed strawberries. I use a food processor but you can mash with a potato masher too. I like mine pretty fine. Mash or process until you like the consistency. Measure sugar into a bowl. Use exact amount. Stir the sugar into prepared fruit and let stand 10 minutes. Stir box of pectin into 3/4 cups of water in s small saucepan. Bring to a boil on high heat, stirring constantly. Boil 1 minute, keep stirring, remove from heat. Stir pectin mixture into fruit & sugar mixture, stir constantly until sugar is dissolved and no longer grainy about 3 minutes. Pour into containers, leave about 3/4″ at top for expansion when freezing, cover. Let stand at room temperature for 24 hours until set. Refrigerate up to 3 weeks. Store in freezer up to one year. Thaw in refrigerator. This will make five 8oz containers. I usually make two batches. My advice would be to make them separately.
