Hello my friends, hard to believe how things have changed in the last month. So much going on in the world. Not unlike all of you I’m finding myself with more time so I thought I’d try to provide some useful ideas/recipes for you.
Since we’ve been at home, kids are doing online school, I’m working remotely, the calendars have been cleared. I’ve been spending most of my time cooking and baking and making things from scratch like my grandmothers used to do.
I made homemade pasta which I’ve done before but only a handful of times. It always seems so intimating until you actually do it (not unlike other things in life, right?). My recipe below. You do not need a pasta maker you can use a sharp knife instead so don’t worry about if you don’t have one you can still do it.
4 large eggs (room temperature)
2 1/2 cups flour
1 tbsp olive oil
1 tsp sea salt
I put all the ingredients in the food processor, Pulse until it comes together in a crumbly mixture. Remove and knead by hand for 1-2 minutes. Form a ball and cover tightly in plastic wrap and refrigerate for at least 30 minutes. I made it into four parts and rolled it so it was thin enough to start feeding through the pasta maker, I changed the setting to a thinner setting each time I ran it through, I did it about four times for each. If you don’t have a pasta maker roll out until desired thickness and cute noodles with a sharp knife.

I fluffed all the strands with a little flour so they wouldn’t stick together! Fresh pasta only takes minutes to cook, probably about 3-4 minutes. Be sure to salt your water! I use kosher salt for that.
I made a simple white sauce with a couple tablespoons of butter, olive oil, garlic, add about a 1/4 cup of of flour cook for a few minutes stirring, add milk, half and half or combination and a touch of heavy cream. Swirl into bowls and top with cheese!
