Need an easy idea for dinner or a great side?
Greek salad! My family loved this.
Yes, some unnamed individuals may remove certain items and I’m ok with that!
The good news is there is always someone who will take what you don’t want.
Add some rotisserie chicken and you have one easy and healthy dinner on the table in no time at all.
For the salad:
I used Romaine, vine-ripened tomatoes, pitted kalamata olives, feta cheese, cucumbers and red onion. A couple tips. I wash and dry my lettuce really well. Use a
A couple tips. I wash and dry my lettuce really well. I use a serrated knife for the tomatoes it’s so much easier. I didn’t buy an English cucumber this time so I scoop out the seeds if I use the regular kind. I sprinkle feta on top but also put it on the table so if you want more you can add it.
I dice up a rotisserie chicken and warm it slightly for a few seconds in the microwave and then put that on top of the salads for a meal!
For the dressing:
Juice of half of a lemon
kosher salt and pepper
I added some chopped up olives and one small clove of garlic chopped as well.
I put everything in a mason jar and shake up! Leftovers can go right in the fridge.
