I almost never make a soup that doesn’t include sweet onion & garlic! They are my go to ingredients. This soup comes together in no time using a rotisserie chicken and my staples of course!
One sweet onion diced, three garlic cloves minced, one can petite diced tomatoes, Rotel diced tomatoes with chiles, box of chicken stock, rotisserie chicken, cannellini beans, cup of small pasta. I used Ditalini, Parmesan cheese and fresh parsley for topping.
Cook pasta to according to package leave al dante, set aside. Put a couple tablespoons of olive oil in a dutch oven or heavy bottom pan. Saute onions until soft, add garlic and saute. Add both cans tomatoes, stock, beans and cook for 20 minutes. Add chicken and pasta cook for 10 more minutes until chicken is warm. Top with cheese and parsley.
