This time of year there’s nothing like a pot of soup on the stove. I found this recipe on Pinterest and thought I’d give it a try! It was very satisfying and delicious.
One rotisserie chicken cut into pieces
six cups chicken broth
one red pepper
two potatoes cut into small cubes
1/3 cup flour
4 TBSP butter
can of corn
1/2 cup half-n-half
crumbled bacon for top
Saute the onion, red pepper, and jalapeño in butter and olive oil until soft. Add garlic and saute for a minute or two. Add flour and cook for two minutes stirring constantly. Add broth and stir. Add potatoes. Bring to a boil and then turn down to simmer for a about 20 minutes until potatoes are fork tender. Add corn, chicken and half-n-half and simmer for 10 minutes. Serve with crumbled bacon on top.
