Chalkboard Menu

I love using a chalkboard to write the week’s menu on.  I’ve been cooking up a storm lately, something about being home and making a meal. I’ve really been enjoying my time in the kitchen. I got out the chalkboard i made from an old frame and wrote out our menu for the week.  For now, it found a home on the buffet in the

My First Try at Galumpki & Other Baking.

Sometimes I look through my Food & Recipes board on Pinterest and my mouth waters. I’ve got so many things pinned. I try new things weekly. Today I spent the day cooking and baking. I made a third loaf of the Honey Oat Bread, the Better Than Anything Cake, Homemade Galumpki & Homemade Caramel Sauce. My grandfather use to take us to this church for a Polish

Homemade Honey Oat Bread

I found this beautiful bread recipe on Pinterest and knew I had to try it. It takes a little time but well worth the effort, it’s amazing! REVISED* I made another loaf.  You can find the original recipe here. After the second rising. If you love homemade bread try the no-knead bread. It won’t disappoint, it’s delicious too! Coated with honey. Sprinkled with Oats. Out

Homemade Salsa

Happy New Year! We’ve been enjoying time together and eating lots! I whipped up a batch of the Avocado Salsa from Chef in Training.  Super delicious and healthy. I did change it a bit from her recipe, I used more avocados, tomatoes, tons of cilantro and more lime juice (I guess it’s the same then, just more right?) Well anyway, you get the idea! Cinnamon Honey Butter

I did some last minute baking today. One for us and two to share. I used Jim Lahey’s no-knead bread recipe (which is amazing if you haven’t tried it). I posted about it here. I also made the Roadhouse cinnamon honey butter to go with it. For the cinnamon honey butter I used two sticks of butter, 1/2 cup confectioner sugar, 1/2 cup honey &

Chicken Fried Rice

I made this for dinner tonight, it was really good. I made a few modifications to the original recipe I found here. I used fresh carrots, one diced small. A full cup of the frozen peas. I used a rotisserie chicken and minute rice. The only specialty item I purchased was sesame oil. I’m sure you could make it with Canola or OO but the

Italian Wedding Soup & No Knead Bread

I feel like I’ve blogged over the years about the no knead bread at least a dozen times but it’s that good! Our nights are getting cooler and we had a rainy day and nothing is more perfect on that kind of day than the house filled with the scent of soup simmering and bread in the oven. The wedding soup is easy and delicious

Need an easy and delicious snack for after school or a get together! I’ve got one for you, it’s perfect for Fall and it couldn’t’ be easier to put together. It’s a simple three layer dip that you serve with sliced apples. Get a pretty dish and add a layer of cream cheese (I used 1/3 less fat), add a layer of caramel and  finish with

Breakfast Bites.

I like breakfast, it’s one of my favorite meals of the day. We have family staying with us this weekend so I thought I’d made some individual breakfast bites inspired by Pinterest. I started with a cupcake pan sprayed with non-stick spray. I lined each cup with shredded hash browns (they come in a bag in the refrigerated section) that I added salt & pepper

Easy Pesto Recipe

Our little garden has been a source of fresh herbs and vegetables for the last few weeks. Today I picked some beautiful tomatoes and fresh basil. I made this easy summer bounty recipe, a quick pesto. I used walnuts in place of pine nuts. Put all your ingredients in the food processor and add olive oil for desired consistency. I had a few slices of
