I love broccoli cheddar soup, it’s one of my favorites. When I go to Panera for lunch I get it almost every time. I found this recipe on Pinterest from Averie Cooks and I thought it sounded good. I stayed pretty true to the recipe except for the following changes. I didn’t do the rue separate I put the butter and flour right in with the onions and garlic once they had cooked for a few minutes. Then went on from there. I did use the dry mustard and regular paprika but I didn’t have cayenne so I left that out. I also used a bit more than two cups of stock (I used chicken). I used regular half n half, not low fat. I wanted to be sure I had enough for everyone. I’d say it was a good six – seven servings.
It was really great, my family loved it! I served it with a loaf of the five hour no knead bread and it was even better than Panera!
