Seems like I always have a couple bananas that don’t get eaten. I love banana bread so I thought I’d whip up a loaf for us to enjoy.
I used three recipes from Pinterest and adapted them. Here is my recipe below.
two ripe bananas
1/2 canola oil
1/3 cup homemade buttermilk (1/3 cup of half-n-half & 1 tsp vinegar, let sit for 5 minutes)
2 cups flour
1/2 brown sugar
1/2 tsp kosher salt
1tsp baking soda
1/2 – 1 cup of chopped walnuts (I didn’t measure them) you can use as little or much as you like!Spray 9 x 5 pan with non stick spray, bake at 350 for 45 minutes. I turned my oven down to 325 for the last 15. Bake until toothpick comes clean.
