Put this healthy treat on the table in five minutes flat. I make this for my kids as an after school snack, there are never leftovers! Serve with your favorite chips.
Two ripe avocados
tomatoes of your choice
cilantro
lemon or lime
red onion
After I remove the pits from the avocados I run my small paring knife in a cross hatch pattern. It makes scooping the avocado out much easier.
Chop the cilantro, tomatoes, red onion. I use the juice of an entire lemon or lime (depending what’s in the refrigerator) sprinkle of kosher salt and pepper.
Mash with a fork but leave with some chunky texture. If i only have the avocados I make without the tomato & red onion and it’s still delicious!
