Delicious Vegetarian Pasta With Roasted Tomatoes and Spinach

Sometimes it’s nice to have a vegetarian dinner. I love this simple dish. It’s packed with good stuff and lots of flavor. My family loved it! I hope yours does too.

Easy Vegetarian Pasta

Roasted Tomato and Spinach Pasta

Ingredients
  1. One pound of pasta
  2. One chopped clove garlic
  3. One bag of spinach
  4. One quart of grape tomatoes
  5. Panko bread crumbs
  6. Pamesean cheese
  7. Olive oil
Instructions
  1. Cook garlic and spinach until spinach is wilted, set aside.
  2. Half tomatoes and coat with olive oil, salt, pepper, a cup of panko mixed with 1/4 cup cheese and sprinkle generously over tomatoes. Roast at 350 about 20 minutes until golden.
  3. While tomatoes are going cook pasta according to package.
  4. Mix all ingredients and add a sprinkle of cheese to the top.

    Yummy goodness and I have some sweet family arriving from California for a week this Saturday.
    I bet I could even get our 3 year old grandson to eat his spinach served this way:)
