I made this for dinner tonight, it was really good. I made a few modifications to the original recipe I found here.
I used fresh carrots, one diced small. A full cup of the frozen peas. I used a rotisserie chicken and minute rice. The only specialty item I purchased was sesame oil. I’m sure you could make it with Canola or OO but the sesame is really great! The only other flavoring is soy sauce (I use the low sodium). I used more like a 1/3 cup of the soy it really absorbs into the rice. Add the 1/4 and then taste it and add more as you like. The whole family (5) ate it which is always a bonus and there were leftovers.
Saute the carrots in sesame oil (first if using fresh), add the onion, saute for a few minutes until tender, add garlic saute a few more minutes.
Add in two eggs and cook, scrambling through the mixture.
Add your cooked rice and chicken and soy sauce.
Stir to combine and until heated through.
