I like breakfast, it’s one of my favorite meals of the day. We have family staying with us this weekend so I thought I’d made some individual breakfast bites inspired by Pinterest.
I started with a cupcake pan sprayed with non-stick spray. I lined each cup with shredded hash browns (they come in a bag in the refrigerated section) that I added salt & pepper to. Bake those at 425 for about 20 minutes. Crack an egg into each cup and bake at 350 for about 8 minutes and then top with shredded cheddar and crumbled bacon. I cooked the bacon while the hash browns were in.
I needed my last few eggs for the cupcakes I have to make later so the extra cups I did with hash brown, cheese and bacon.
I think these would be great drizzled with a bit of hollandaise sauce but I wasn’t that ambitious!
